  4. Add tofu mixture and stir through gently for approx 2 mins.
  5. Add frozen peas and stir for approx 30 seconds. Turn off heat, add spring onions and cashew nuts. Stir through the residual heat.
  6. Serve with brown rice.

Slice the tofu and place in a lunchbox, pour the marinade on top, cover and place in the fridge for an hour. Heat a tablespoon of oil in a wok. While the tofu is draining, prepare the marinade. In a bowl, whisk together the rice vinegar, light and dark soy sauce, Asian sesame oil, sugar, chili paste, garlic, and olive oil. Cover and refrigerate while preparing and dry frying the tofu.
