- Add frozen peas and stir for approx 30 seconds. Turn off heat, add spring onions and cashew nuts. Stir through the residual heat.
- Serve with brown rice.
Slice the tofu and place in a lunchbox, pour the marinade on top, cover and place in the fridge for an hour. Heat a tablespoon of oil in a wok. While the tofu is draining, prepare the marinade. In a bowl, whisk together the rice vinegar, light and dark soy sauce, Asian sesame oil, sugar, chili paste, garlic, and olive oil. Cover and refrigerate while preparing and dry frying the tofu.
