- Prepare 1 cup rice flour
- Get 3/4 cup granulated sugar
- Prepare 2 tsp baking powder

- Prepare 1 cup coconut milk
- Get 1/4 cup fresh or whole milk
- Take 1/4 cup softened butter
- Get plus extra for coating
- Take grated cheese for toppings, salted egg, sliced or cream cheese, sliced, ham
- Prepare few pieces banana leaves
Bibingka is baked in a makeshift oven fueled by charcoal. When you travel in Ilocos riding in a bus, there are vendors who hop in a bus selling bibingka, kalamay, chichacorn, puto and others. A special clay oven known as "Bibingka oven" is needed to bake this rice cake. The clay pot is placed between the layers of the Bibingka oven and lit charcoals (locally known as "uling") are placed below and above the clay pot to evenly cook the mixture.
Steps to make Special Bibingka:
- Combine butter and sugar together while whisking then add the eggs.
- Gradually add the rice flour and baking powder.
- Add the coconut milk and fresh milk. Beat well until smooth.
- Line molds or round pans with pliable banana leaves (brushed with butter).
- Pour mixture in the prepared molds or muffin pans.
- Bake in (preheated) oven 375 degrees F for 20 minutes.
- Remove from oven.
- Top with sliced salted eggs and ham.
- Bake again for 10-15 minutes or until the color of top turns medium brown.
- Remove from oven. Brush some butter on top if desired.
- Serve with grated coconut or cheese!

Traditionally, the rice cake is baked in clay ovens with glowing charcoal under and above the cake. Royal Bibingka is not your regular bibingka.
