To make chili sweet & sour sauce, in a clean bowl, add 1 tablespoon of ketchup, 1 teaspoon of white vinegar, 1 teaspoon of sugar, 1/4 – 1/2 teaspoon of sriracha, a dash of grated ginger and a dash of salt. - Mix well and make sure the sugar is all dissolved. I added ¼ tsp of sriracha but you can add more if you like the sauce spicier

Heat the vegetable oil in a cast-iron or non-stick skillet over medium high heat and add the tofu. Prepare the sauce by combining the scallion, soy, garlic, sesame oil and chili sauce (if using) in a small bowl. Plate the tofu and serve with the sauce. Once oil is heated up, add the tofu to the skillet and let brown on all sides. In the meantime, whisk together the ingredients for the sauce.
